What items do I need to specify?

You only need to specify valuable items over £2,000. Valuable items are: jewellery (including costume jewellery), articles of or containing gold, silver or any other precious metals, cameras (including video cameras, camcorders and digital cameras), binoculars, watches, furs, paintings and other works of art and collections of stamps, coins, medals and clocks. So, you don't need to specify every item over £2,000.
